TRADITIONAL ENGLISH FRUIT CAKE
Traditional English Christmas Fruit Cake is Gluten free and liquor free. You use Wheat flour which is the original flour used in the recipe, and if you don't follow a gluten free diet. I used Cassava, which is a naturally gluten free flour, find the link in my notes. This flour can be used as a 1:1 substitute of the Wheat flour. There are slightly different recipes for this cake, and this is the one I make for my family at home.I decided to focus on the recipe only although if you want to decorate the cake the English tradition is to cover it with Marzipan (which I love! is a paste made with Almonds) then cover it with Fondant icing or royal icing. This recipe is based on Mrs. Robinson's fruit cake, which I got from a very old English Recipe Book, if you make it let me know your comments. Enjoy!Norma
Ingredients
- 125 gr Butter melted
- 1 piece Orange (Zest and juice)
- 1 piece Lemon (Zest and juice)
- Filtered water the necessary
- 50 gr Candied peel
- 50 gr Cherries
- 175 gr Raisins
- 100 gr Apricot Finelly chopped
- 100 gr Currants
- 1 tsp Cinnamon powder
- 1 tsp Nutmet
- 1 tsp Mixed spice
- 250 gr Cassava Flour (or use Wheat flour)
- 1 tsp Bicarbonate of Soda gluten free
- 1 pinch Salt
- 2 piece Eggs
Instructions
- Start by melting the Butter in a large pan
- Continue in low heat
- Add the dried Fruit, in any order
- Add the Zest of lemon and Zest of Orange
- Add the Lemon Juice
- Place into a Cup the juice of the orange and complete with water to make 250ml (which is one cup all together)
- Add the Orange juice mixed with water into the pan with the fried fruit
- Add also the Cinnamon powder, nutmeg and mixed spice
- Mix well all the ingredients and increase the heat to medium
- Leave to simmer for 1 minute with the lid on
- Once the flavours and all integrated transfer the mix to a large pan to cool down
- While the fruit is cooling down, place in a bowl the flour
- Incorporate the Bicarbonate of Soda and mix them well
- When the fruit is completely chilled, then add the 2 eggs to the fruit and make sure all the ingredients are well integrated and mixed
- Following add the flour mixed with the bicarbonate of soda, in 3-4 parts or as you feel comfortable
- Mix very well all the ingredients together, I find that using a wooden spoon is better
- Prepare a lined mold with baking paper or greased
- Pour the mix of the cake and make the surface is spread evenly
- Take to a preheated oven at 180 Celsius and leave for 1 hour and 15 minutes, or until you insert a toothpick, and this come out clean
- Leave it to cool ready to enjoy.
